Gunja
   
   

 Ingredients

1 cup all-purpose flour
2      tablespoons oil, butter or ghee
about ¼ cup water
vegetable shortening for deep -  frying

For filling

1 cup coconut powder 
¼ cup chopped almonds and pistachios
2 tablespoons raisins
¼ teaspoon cardamom
½ cup sugar (or according to taste)
   

Step 1
Combine all purpose flour and oil or butter in a bowl and mix well. Add little water at a time to make stiff dough Knead dough for a few minutes, and divide it into 14 to 15 equal size balls.
  

Step 2
Mix all the ingredients for the filling.
  

Step 3
Thinly roll out each ball until about 4 inches in diameter.
  

Step 4
Place about 11/2 tablespoons of the filing mixture on half of the pastry circle. Wet the edge of the other half of the circle and fold it over to make a stuffed semicircle.
  

Step 5
Seal the seam with your fingers...
  

Step 6
...or a gunja cutter and then gently press with a fork or pinch it with your thumb and fingers.
  

Step 7
Make all the gunjas, cover them with a plastic wrap, and set aside until ready to fry.
  

Step 8
In a heavy frying pan heat vegetable shortening over medium heat. Fry gunjas over low heat until they are golden brown on both sides.
  

Step 9
Remove them from the pan and drain on paper towels. Allow the gunjas to cool, and store in an airtight container or cookie jar. Serve cold
