Macaroni
   
   

Ingredients

4    cups of cooked elbow macaroni or other small pasta
¾   cup chopped fresh mint
1    cup green bell pepper, chopped ½ inch long and 1/8 inch wide
1    cup red bell pepper, chopped ½ inch long and 1/8 inch wide
1    cup mix vegetables (green beans, carriets, corn and peas)
3    tablespoons lemon juice
1    teaspoon salt (according to taste)
3    tablespoons oil

   

Step 1
In a big, heavy frying pan, heat oil cumin seeds.
  

Step 2
And onion and fry for few minutes.
  

Step 3
Add mix vegetables and cook for about 10 minutes on medium low heat or until they become a little tender.
  

Step 4
Add bell peppers and cook for 2 minutes.
  

Step 5
Add cup mint leaves and save some for garnishing. Mix well.
  

Step 6
Add the boiled macaroni, salt and black pepper, lemon juice and mix properly. Cook for 1 to 2 minutes.
  

Step 7
Garnish with mint leaves, serve hot or cold.
